This entry level Food Hygiene course will allow staff gain understanding of food hygiene practices. It is an excellent entry level course for all staff handling food. It can be taken as a stand-alone course to meet the Australian-wide legal requirement that all food handlers are trained in food safety, or it can be a stepping stone becoming a Food Safety Supervisor.

Competence in this course as a stand-alone course does NOT result in a Food Safety Supervisor certificate. Participants will need to undertake the full Food Safety Supervisor course to receive NSW Food Authority FSS certificate.

Course Description

This half day course meets the current requirements under the NSW Food Act 2003 in relation to the skills and knowledge that a person involved in the preparation, packaging or service of food is required to have in NSW and meets the requirements of Food Standard 3.2.2.

The content of the course ensures that participants are aware of their responsibilities as a food handler, and provides comprehensive information about personal hygiene and best practice for ensuring food safety.

This entry level course applies to all tourism, hospitality and catering organisation with permanent or temporary kitchen premises or smaller food preparation or bar areas. It applies to food handlers which can be any person who directly handles food or food contact surfaces food such as cutlery, plates and bowls. People at many levels use this skill in the workplace during the course of their daily activities, including cooks, chefs, caterers, kitchen stewards, kitchen hands, bar and food and beverage attendants and sometimes room attendants and front office staff.

Entry Requirements

Participants must

  • Provide one form of photo I.D. (e.g. Passport, Australian driver’s licence, proof of age card)
  • Provide Unique Student Identifier (USI) number
  • Complete TP Training Language, Literacy and Numeracy assessment

This Food Hygiene course combines plain English, videos, photos, and questioning to ensure all learners are able to have the best possible chance at comprehending the required knowledge and skills. Participants should arrive 15 minutes prior to the scheduled starting time of the course to complete the necessary enrolment paperwork.

If participants arrive 15 minutes after the scheduled starting time, entry to the course will be refused.

Training & Assessments

Food Hygiene course covers food hygiene-related topics including hygiene procedures, identification of food hazards, personal health issue reporting, prevention of food contamination and cross-contamination and handwash techniques.

Food Hygiene training course consists of PowerPoint presentation, class activities, videos and end-of-the-day assessment.

Throughout the day students will complete a multiple choice, case studies and short answer-based assessment which will confirm the knowledge and skills that have been achieved to demonstrate competency across the unit.


Upon successful completion of the course, participants will receive a nationally recognised Statement of Attainment (SOA) issued by TP Training listing the unit of competency included in this training course.
